Reverse Seared Pork Chop w/ Blackberry Reduction

Pork chop maybe quick and easy, but the blackberry reduction makes it feel fancy.

Reverse Seared Pork Chop w/ Blackberry Reduction

Thick cut, bone-in pork chop

Olive oil or Cornhusker Duck Fat Spray

Favorite pork seasoning

2-3 Tbsp butter

Blackberry Reduction:

2 cups blackberries

2 Tbsp Balsamic Vinegar

2 tsp lemon juice

1/2 cup sugar

Setup grill for indirect cook at 275F

Apply thin coat of olive oil or duck fat spray to both sides of pork chops. Season liberally with your favorite pork rub on both sides. Place pork chops on grill and use a probe to monitor internal temp of pork. Meanwhile make blackberry reduction by placing all the ingredients into a small sauce pan over medium low heat. Stirring occasionally, cook for approximately 15 minutes or until the blackberries bread down. Pour through a strainer to remove the larger pieces of blackberry fruit. Once pork reaches 140F, take pork chops off the grill.  Melt butter (2-3 Tbsp) in cast iron skillet.  Add pork chops and sear with melted butter for one minute on each side. Let rest for approximately five minutes. Pour reduction over the top and enjoy.
