Poppy Seed Chicken

A great comfort food with a new twist on the smoker.

Poppy Seed Chicken

2-3 chicken breasts seasoned with Fire, Smoke, BBQ Windy City rub

2 cans cream of mushroom soup

2 cans cream of chicken soup

16 oz sour cream

3 sleeves Ritz crackers

1 stick butter, melted

Poppy seeds (optional)

Grill/bake chicken at 300-350 degrees until internal temp reaches 160 degrees.  Cut into bite sized pieces.Heat oven/grill to 375 degrees.  Layer chicken in the bottom of a casserole dish.  Mix together cream of mushroom soup, cream of chicken soup, and sour cream in medium sized bowl.  Pour over chicken in the casserole dish.  Crush Ritz crackers and sprinkle evenly over top. Sprinkle poppy seeds, to taste, on top of Ritz crackers.  Pour melted butter over top.  Cook for 30 minutes.
